A triple-starred chef arrives in Saint-Emilion
Overlooking the vineyards of the Pavie estate, the Hotel et la Table de Pavie is a relais-chateau that embodies the French art de vivre at its most refined. Since 2020, the kitchens of this prestigious restaurant have been led by the triple-Michelin-starred chef Yannick Alleno. Trained in some of Paris's finest houses, Alleno served as head chef at the Hotel Scribe near the Opera before moving to Le Meurice on Rue de Rivoli, where he earned his third Michelin star at just forty years of age.
A prolific figure in French gastronomy, Alleno is also the founder of a respected culinary magazine, the Terroir Parisien bistro chain, and the STAY concept restaurant at the Sofitel le Faubourg. In 2017, his restaurant Le 1947 in Courchevel was awarded three Michelin stars, placing him alongside Marc Veyrat, Joel Robuchon, Alain Ducasse and Eugenie Brazier as one of the very few chefs to have held three stars at two establishments simultaneously. At La Table de Pavie, Alleno returned to work alongside the Perse family, long-standing friends who acquired the relais-chateau in 2001, succeeding the two-starred chef Ronan Kervarrec, whom Alleno himself had recommended for the position in 2016.
The restaurant
Set at the heart of the classified Saint-Emilion vineyard, La Table de Pavie brings together local produce and the surrounding appellations in dishes of precision and refinement. Alleno's cooking is driven by a deep respect for regional ingredients, elevated through flawless technique. The menu is designed to pair seamlessly with Bordeaux and Saint-Emilion wines, and the 800-label wine list, curated by head sommelier Benoit Gelin, includes some 80 Saint-Emilion chateaux.
The restaurant is open for lunch and dinner from Tuesday to Saturday, with a more relaxed atmosphere at midday and a dressier tone in the evening. The dining room looks out across the ancient rooftops of the medieval village and the vineyards stretching to the horizon, a setting that is part of the experience.
The hotel
The five-star Hotel de Pavie occupies the beautifully restored buildings of a former convent in the medieval heart of Saint-Emilion. Owned by the Perse family, proprietors of Chateau Pavie, Chateau Pavie Decesse and Chateau Montbousquet, the hotel comprises 17 rooms including three suites, all designed and decorated by the celebrated architect Alberto Pinto. Terraces and windows open onto exceptional views over the vineyard and the village.
Rooms range from 35 to over 60 square metres, furnished with a blend of tradition and modernity that places comfort on equal footing with elegance. Parking, Wi-Fi, valet and porter services are included in every stay, and pets are welcome for a supplement. The hotel's position allows guests to walk directly into the medieval lanes of Saint-Emilion for an evening stroll among the limestone buildings.
