Le Bo-Tannique, Gastronomic Restaurant on Place Saint-Projet
Set inside a former church in the historic heart of Bordeaux, Le Bo-Tannique is a gastronomic restaurant led by two chefs trained under Guy Savoy, Joel Robuchon and Alain Pegouret.

Two chefs, one sommelier, a shared passion
Florent Presse and Romain Le Guillou met while training under some of the greatest names in French cuisine, including Guy Savoy, Joel Robuchon and Alain Pegouret. That shared apprenticeship left them with exacting standards and a restless pursuit of flavour, texture and precision. After working together at Le Rackham in Roscoff, the two young chefs joined forces with sommelier Guillaume Rossi to open a restaurant of their own in Nouvelle-Aquitaine.
Le Bo-Tannique opened in 2019 on the site of the former Eglise Saint-Projet, at 2 Rue Tustal in the historic centre of Bordeaux, steps from the Tour Pey-Berland. The dining room occupies a striking space where medieval stonework, the remnants of the church nave and contemporary design intersect. A pillar from the original nave still stands at the centre of the room, setting the tone for a cuisine built on contrasts. The restaurant has quickly established itself as one of the most talked-about gastronomic addresses in the city, praised for the quality of its cooking, service and wine list alike.
A menu that changes with the seasons
The cooking at Le Bo-Tannique mirrors its setting, balanced, harmoniously contrasted, at once modern and rooted in the traditions of classical French gastronomy. The plates are generous yet meticulously composed, drawing on the chefs' Breton experience, acquired in Roscoff, as much as on the exceptional local produce of their adopted region. Travel and creativity enrich the pairings further, giving the kitchen a distinctly personal voice.
The seasonal menu offers four starters, four main courses and three desserts, with descriptions that foreground the principal ingredient while concealing considerable inventiveness beneath their simplicity. Sommelier Guillaume Rossi, who also oversees the dining-room service, curates a wine list that leans towards natural and biodynamic producers.

Le Bo-Tannique is open for lunch and dinner from Tuesday to Saturday, at 2 Rue Tustal on Place Saint-Projet. The Sainte-Catherine tram stop is two minutes away on foot, and the Pey-Berland car park is close by for those arriving by car. The a la carte menu offers starters from 14 euros, main courses from 23 euros and desserts from 10 euros. A three-course set menu with an amuse-bouche is available at 39 euros. At lunchtime, a shorter menu on the blackboard starts at 21 euros for two courses, making the restaurant an accessible gastronomic option for both a weekday lunch and an evening occasion.
